Çebiţi: A Traditional Turkish Dish

Çebiţi is a distinguished Turkish dish blending historical depth with culinary sophistication.

  • Ground lamb or beef

Prepare the Vegetables for Çebiti

  • Begin by selecting firm and fresh vegetables such as bell peppers, zucchini, eggplants, and tomatoes
  • Wash them thoroughly and carefully hollow them out
  • Remove the seeds and pulp while leaving the outer shell intact. This will create vessels for the filling.

Prepare the Filling for Çebiti

  • In a mixing bowl, combine ground lamb or beef (or ground chicken as an alternative),
  • Washed short-grain,
  • finely sliced onions,
  • blend of spices.
  • Common spices include allspice, black pepper, cinnamon, mint, parsley, and sumac.
  • Adjust the seasoning according to taste preferences.

Optional Addition of Pine Nuts

  • Preast pine nuts separately in a dry skillet until they turn golden brown.
  • Once toasted, add them to the filling mixture for an extra layer of flavor and texture.

Stuff the Vegetables

  • Stuff each hollowed-out vegetable with the prepared filling mixture, ensuring they are generously filled but not overly packed.
  • Leave a bit of space at the top to allow the rice to expand during cooking.

Arrange in a Baking Dish

  • Place the stuffed vegetables in a baking dish,
  • Arrange them snugly side by side to prevent them from toppling over during cooking.

Add Liquid

  • Pour pureed tomatoes or stock over the stuffed vegetables in the baking dish.

This liquid will help cook the rice and keep the dish moist and flavorful.

 The liquid level should sufficiently cover about halfway up the vegetables.


  • Cover the baking dish with aluminum foil and place it in a preheated oven.
  • Bake at a moderate temperature until the filling is cooked through, and the vegetables are tender.
  • This typically takes around 45 minutes to an hour, depending on the size of the vegetables and the oven temperature.

Serve Çebiti

  • Once cooked, remove the Çebiti from the oven and allow it to cool slightly before serving.
  • It can be enjoyed warm or at room temperature, accompanied by a dollop of yogurt and a sprinkle of fresh herbs for garnish.

Çebiti is commonly prepared as part of everyday meals for families’ regular occasions in weekend gatherings, making relationships more celebrating. Its recipes may vary slightly, based on family tradition and personal taste.

While Çebiti is not specifically reserved for special events, it also can be served at special events. It is a popular choice for larger gatherings as well.

Çebiti is commonly available in traditional Turkish cuisine. While many people prepare Çebiti at home, restaurants often offer their variations of the dish, incorporating unique twists or presentation styles according to customers’ choice.

As part of a selection of traditional dishes, it is typically listed as a main course In tourist areas or larger cities with diverse dining options.
